We are overrun with carrots!

We have carrots growing little root hairs in our refrigerator.

Our vegetable drawers won't open or close, because they are so full of
carrots.

We have 4 rabbits (BTW, happy 5th birthday, Orpheus and Eurydice!)

Each morning, every rabbit here gets a carrot top, with a small piece of
carrot root attached.

4 x 30 days (1 month) =  ?????? (A LOT of carrots!)

We juice 'em, we slice and simmer them. We eat them raw.

We are beginning to turn orange!!!!

I'm an easy month away from a carrot harvest.

I just pulled all the bolting radishes and dumped them into the compost
pile, though. I've never tried, do they like radishes?

Mine *love* radishes!

At first, I was nervous that they might make them gassy. (Now why would
I possibly think *that*???)

And at first, they were a bit leery of the root part, but they adored
the leaves.

Now they go for the root enthusiastically, too.  They seem to like the
"bite."

Mine love radishes, I grow them just for the bunnies, they especially like
the hot white variety.

Oh, man! Carrot cake is the best!   That cream cheese frosting! I have a
recipe that incorporates pineapple, and it is too yummy.

Carrot cake doesn't really use all that many carrots, though. : (

Carrot soup:

1 kilo carrots
4 potatoes
1 onion
1 clove of garlic
1 liter of vegetablestock
pepper, seasalt
1 cup of sour cream

Cut the carrots in pieces and fry them with the garlic and the onion and the
diced potatoes in some oil or butter. Add a liter of vegetablestock. Leave
to simmer for 20 minutes. When soft, add pepper and salt. Blend the lot and
serve with a dollop of sour cream.

Thank you, Els. Very similar to the recipe I've used!

Bottom line is when you have 120 carrots a month in the house, it's hard
to consume them all.  Juicing is the most efficient and appealing answer
that we've come up with. The question "Would you like some carrot
juice?" is starting to provoke laughter around here, though.

I have a recipe for carrot soup, if you are interested.

I used to take excess carrots to a senior citizen residence where my mom
lived; I would slice and cook them first.

Oh my buns love the carrots!  Baby carrots at my house.  Louise goes
nuts in the morning until she gets hers.  And she gets all the buns
going.  6:30 AM is carrot time!
