If my other rat dies, leaving my 2.5 year old rat alone, should i buy
another rat to keep it company, or should i buy 2 other rats, that way in a
years time, if the first one goes they still have company..

I would get two. This way, if the older rat doesn't feel like playing
then they would have each other for the rough play. :)

If you have the room and amenitites to get 2 then I would as you are
quite right with the logic of it..:)  I often wonder what I will do when
we get down to 1....

Definitely option 2. I don't mean to sound pessimistic but I really
doubt that your other rat will live a whole year longer. Typical life
span is about 2-2½ years.
